Mushroom Stroganoff – 5:2 Diet Recipe

I’m not hugely bothered about my weight – I’m anything between a size 8 and 12 depending on the brand and I have a moderately healthy diet, albeit the a-little-too-often slice of cake or chocolate brownie.

I know some people are skinny minnies – some people work for it, some people are naturally born like that. If that’s the way you want to be, kudos to you.

A good friend of mine has been going on lots of dates recently – he’s a lovely guy and I hope he finds someone – but he seems to call most of his daters ‘a bit podgy’.

What annoyed me most of all is that this sent me into paranoia about myself. Everyone is a little bit conscious of their own bodies – so we don’t need other people judging us too.

So stop judging please people!!

On other matters, if you’re feeling a bit ‘podgy’ today – this would be a good one to make for dinner. It’s super yummy (and even got the approval of Mr TCG, depsite the lack of meat).
Plus it only takes about 5 minutes to make, which is really important when you’ve been trying to eat healthily all day and are really hungry!

And it’s a win-win as it only costs 59p per serving too.

Mushroom Stroganoff
Serves 4 – only 90 calories per serving

Ingredients:

600g mushrooms, roughly chopped

120g half-fat creme fraiche

1 tsp smoked paprika

1 onion, finely chopped

2 garlic cloves, finely chopped

 

1. Fry the garlic and onion in a little oil until softened, then add in the mushrooms.

2. When the mushrooms are soft, add the paprika and creme fraiche and stir to form a sauce. Continue to stir until heated through, then serve.

    Oh this looks delicious! I’ve recently started the 5:2 diet and so far so good. But I’m pretty rubbish at actually cooking anything nice for myself and I really should. Bookmarked!
